I noticed that the (original) Fuso witches listed on Category:Strike Witch are using Japanese Name order (surname first, given name second), and since I have added a few profiles for some other witches, should I be using that name order? There are a few references here and there that use the opposite word order, should those be corrected, or should we just let redirects handle them?

My general rule of thumb is to use the native naming order for each character, IE, Japanese aces get the Japanese naming order, and western aces get the western naming order. Having to figure out which name is the surname and which is the given name is a pet peeve of mine when studying japan or things japanese, so my policy is to write their names in the order they would write them, rather than try to wseternize it. On that note, I may have to go on an article moving spree to fix any inconsistencies.
